Chocolate Crinkles

More cookies. I LOVE cookies. These I had a random craving for last winter, so I emailed my mom for the recipe, baked them, and proceeded to ship a dozen each to friends in Costa Rica and Brazil so that I didn’t eat them all myself.

But I totally could. Rich and chocolatey like a good brownie and coated in powdered sugar, these are Evil Cookies.

1/2 cup vegetable oil
4 sq. unsweetened chocolate (4 oz) – melted
2 cups granulated sugar
4 eggs
2 tsp. vanilla
2 cups flour
2tsp baking powder
1/2 tsp. salt
1 cup (or more) confectioner’s sugar

Mix oil, chocolate, and granulated sugar.
Blend in 1 egg at a time until well mixed.
Add vanilla.
Sift flour. (if you don’t have a sifter, use a wire strainer)
Stir flour, baking powder, and salt into oil mixture.
Chill several hours or overnight. You don’t want this to be soft.

Heat oven to 350˚
Drop by teaspoonfuls into confectioner’s sugar. Roll in sugar; shape into balls.
Place about 2 inches apart on greased baking sheet.
Bake 10-12 minutes.

Tip for this one: stick the dough back in the fridge while you’re waiting for the first tray to come out of the oven. The dough simply does not work if it’s soft.
