Snickerdoodles

I’m not going to rhapsodize about these cookies, but I’ll just say this: nothing rolled in cinnamon sugar can be bad. And these are really, really good. Sweet, buttery, chewy, and spicy-sweet.

I guess I rhapsodized a bit after all.

1 cup margarine, softened

1 1/2 cups sugar

2 eggs, beaten

2 3/4 cups flour

2 t. cream of tartar

1 t. baking soda

1/2 t. salt

Cream together margarine and sugar. Add eggs, then mix in the rest of the ingredients and refrigerate overnight. When chilled, roll into small balls and then roll in cinnamon-sugar mixture before placing on a greased cookie sheet. Bake at 375F for 10-12 minutes. Makes approximately 5 dozen cookies, depending upon the size.

One general cookie tip: bake for half the time on the bottom shelf, and then move them up to the top to finish. This allows them to bake evenly, and you have a smooth rotation of cookie sheets throughout the baking process, making it go faster.
