Spinach Calzone

Today is a day for salsa, dips, hamburger and hot dogs, which is why it totally makes sense that I’m choosing to share a calzone recipe instead.  This one calls for spinanch and Italian sausage.  I don’t know about you, but ground sausage is hard to come by in my grocery stores on the east coast, so you could probably substitute pepperoni, sliced sausage, or just make it a vegetarian calzone instead by using some meaty mushrooms like portabellas or shitake.

1    16oz box hot roll mix
2    1  9oz box frozen creamed spinach, thawed
3    cups mozzarella cheese
1 # Italian sausage browned & drained
1/3  cup Parmesan cheese

Preheat the oven to 425°.
Prepare the roll mix, omitting egg & margarine. – use 11/4 cups hot water & 2 T. olive oil – knead for 5 minutes – divide into 8 pieces – let rest for 10 minutes

Mix the other ingredients together – I usually add sliced black olives and a small can of mushrooms to this mixture.

Roll each piece of dough into a 6 inch circle – spoon about a 1/2 cup of the cheese mixture on each circle.
Fold over and seal the edges with a fork – prick the top with a fork.

Bake for 12-15 minutes until browned.
