Indonesian Ginger Chicken

This violates my self-imposed rule of only posting recipes that I’ve cooked but, well, it sounds awesome, and given that I got a muscle spasm last week, I haven’t cooked in a while.  (Better now, which means you should see my mom’s stuffed peppers recipe in a day or so.)

This recipe is from the Barefoot Contessa Cookbook  by way of Lobstersquad.

2 lb chicken pieces
1/3 cup honey
1/3 cup soy sauce
1 chunk of ginger, roughly chopped
4 cloves of garlic, smashed

Put everything in a freezer bag. Maybe it would be best to mix it in a bowl first, buy I just bunged everything in, and it was fine.
Marinade overnight.

Bake, skin down, in a 350ºF oven for thirty minutes. Turn the oven up to 450ºF, turn the chicken over, and leave it another half an hour.
Let it stand for 20 minutes or so.

According to Lobstersquad, cutlery is not allowed with this recipe.  She also suggests using one of those disposable trays, and I agree, because burnt soy and honey sounds like one of my personal kitchen nightmares.
