Chili-Rubbed Steak Tacos

Ellie Krieger’s Healthy Appetite show on Food Network is probably one of my favorites; she’s a nutritionist, and her show focuses on easy, healthy food, including updates of some less than healthy classics.  I watch it whenever I can catch it, which isn’t often, because unlike some other Food TV personalities I could mention, Ellie isn’t repeated a hundred times a day.  I’m pretty sure she’s only on on the weekend (and I often sleep through her show, I think).  She also doesn’t have a cookbook, something I find very, very sad.

This is one of my favorite recipes from her; it’s Mexican-inspired, so an obvious and immediate win from me as we should all know by now.  It’s quick-cooking, so another win.  And it’s fairly inexpensive – you don’t need to buy filet mingnon here, people,  or even the top sirloin called for in this recipe.  I’ve made it successfully with flank steak and London Broil.  It takes seconds to put the rub together, and just a few minutes on a hot grill to cook the steak, and then you’re pretty much done.

1 tablespoon chili powder
2 cloves garlic, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
A pinch cayenne pepper
1 1/4 pound top sirloin steaks cut 1-inch thick
12 small corn tortillas (5 to 6 inches in diameter)

n a small bowl stir together chili powder, garlic, cinnamon, salt and cayenne pepper. Rub spice mixture on both sides of steaks.

Grill or broil steaks for 5 to 6 minutes on each side for medium rare, turning once. Remove from grill and let meat sit for 10 to 15 minutes. Carve into thin slices.

Warm tortillas by placing them on the grill, for about 30 seconds, turning once. Or place 6 tortillas at a time between 2 moist paper towels and microwave for 45 seconds.  Pile the steak and taco condiments of your choice into tortillas and serve.

I usually use flour tortillas; corn ones are hard to keep fresh, and are too small for my liking anyway.  My favorite tortilla for this and other applications are Trader Jose’s handmade flour tortillas.
