Tomato and Spinach Soup

I meant to post this earlier, but I didn’t even get around to making it until this week.

Tomato and spinach soup is one of the few keeper recipes I’ve gotten off 30 Minute Meals.  It’s quick and easy, a basic tomato soup, and the addition of spinach adds some needed leafy green vegetables to my diet.  Great alone, with a salad, or with sandwiches, and it can be on the table and ready to eat in 20 minutes.  Additionally, you only have to chop the onion and garlic; everything else is dumped straight from the packaging.

1 shallot, finely chopped

2 cloves garlic, chopped

3 T extra virgin olive oil

1 28-oz can chopped tomatoes, drained

1 28-oz can crushed tomatoes

2 cups vegetable broth

1/2 10-oz sack of baby spinach

salt, to taste

pepper, to taste

grated parmagiano reggiano, for garnish

Heat olive oil in a heavy-bottomed pot and add chopped shallot and garlic.  Cook until onion is translucent, and add crushed tomatoes and chopped tomatoes.   Add vegetable broth and season with salt and pepper.  Let simmer for 10 minutes.  Add spinach and cook until wilted, another couple of minutes.  Ladle into bowls and top with grated cheese.

I’ve added dill to this before, and you could add any combination of Italian-style herbs as well.  Also good with shredded cheddar cheese or sour cream as a garnish.  I often eat this alone, with just a few slices of sourdough as an accopaniment,  but it’s great with a grilled cheese sandwich too.
